I’ve found that I absolutely *must* take my time when making a bolognese sauce – it’s the only way to create deep, rich flavor. If you take the time to *really* cook your onion/carrot/celery/tomato paste mixture (as the awesome Anne Burrell says, “Burn the crap out of it!”) the final sauce will be totally amazing!
