I’ve learned to enjoy cooking, but the chore of making a list, bleeding money at the grocery store and then coming home to find you’ve forgotten the cardamom still drives us to take-out more than we’d like. I love to cook using vegetables in unusual ways…sometimes to try and trick my children into eating them without complaining and sometimes just to see what I can do with them. My personal favorite is dessert using vegetables like “coconut” pie that has no coconut but is loaded with spaghetti squash or brownies that are full of zucchini.

I enjoy having other people cook for me, of course. My boyfriend and I also like making dinner together. Pancakes or french toast for dinner are always hits. However, if we manage to get ourselves up, we like incorporating farmer’s market finds into our dinner dishes.
One super easy and (somewhat) healthy one-pan dinner I like to make is frozen, pre-cooked shrimp with fresh zucchini and squash (and butter, which is why it is only somewhat healthy). It takes about the same amount of time for the veggies to cook as it does for the shrimp (thawed) to heat up, which is pretty fast! Andrew doesn’t like it, but this is my favorite go-to dinner that isn’t pasta based.

Yum, yum! We love to cook and do our meal planning on Sunday mornings before heading off to the grocery store. We have a few staples that make their way on the rotation so that we have one familiar dish per week. Otherwise, we try new things every night!

Fridays is always pizza night, but take-out can be so expensive! So, we always buy a frozen pizza dough ball during our weekly shopping trips. Then on Fridays we take it out of the fridge and let it sit out all day on the counter to puff up. Then at dinner time, we roll it out and top it with a few spoons of jarred pizza sauce and then get creative with toppings. Fun!

The best thing I’ve done for our suppers (and our bank account!) lately is to use almost everything in our pantry before we do more grocery shopping. It 1) forces me to use things I would normally let chill in the pantry for months, 2) makes me find new and creative ways to put meals together with sometimes limited ingredients, and 3) saves us a lot of money by minimizing those “I only need milk and I somehow spent $40 anyway” trips to the market. We’ve ended up with some pretty good pantry meals this way!

I generally make very dinnery things for dinner but every now and then I break out the waffle iron and make waffles for dinner. It is the classic “breakfast for dinner” but scramble eggs aren’t going to cut it. It’s really all about the waffles.

My super easy dinner is Chicken Caesar wraps. Just throw some cooked,chopped chicken along with salad, dressing, cheese, and croutons in a tortilla and wrap it up. I try and cook a bunch of chicken breasts on the weekends and then chop and freeze them for recipes like this or chicken pot pie, chicken enchiladas, etc.
I also love Allrecipes.com. I have found many wonderful recipes from that site.

My favorite way to mix things up is to cook every alternate day, my husband cooks on the days I don’t. He is an excellent cook and since we come from diverse backgrounds- I am Indian and love my food spicy and he is Jewish and likes things to be interesting after having spent his entire childhood eating gefilte fish- we come up with a wide range of dishes. Ooh…and having friends that like to host dinner parties is just fabulous!!

The most intersting meals come from recipes and instead of heading to the grocery store for the one or two ingredients that I’m missing, I try to substitute with another similar ingredient I have on hand. Most of the time the substitutions work but occasionally we look at each other and grin knowing that “this won’t be a repeat!”

I would love to cook at home, however, I find it easier to shop my local Jewel and pick up Marie Callendar’s Pasta Al Dente meals and microwave them. In 4:30, it’s done! And, for $2.50 (on sale), what a steal!

Well, as I am reading this, I’m still in a food coma from our monthly lunch pot-luck at work. So I’m not sure I’m in the mood to talk about food quite yet….
However, my favorite trick to do in the kitchen/shopping is to buy a whole roasted chicken at the grocery store in the deli section that is already done up. I will bring it home, shred the chicken for enchiladas, freeze the other half of shredded chicken for another meal on down the road, and then freeze the remaining carcass and chicken left on the bone for a soup later on, too. So basically I can get three meals worth out of a $4.99 chicken that I don’t have to lift a finger to make. I just pulled said chicken carcass out of the freezer last Wednesday, boiled that sucker up to get the rest of the meat off the bone, ladled yummy chicken-flavor water/stock out of there and did a pot of homemade chicken and noodle soup. As RR would say: Delish!
